Fast, Healthy dinner, for the whole family

Need an idea for a fast, healthy dinner the whole family will love?

HEALTHY NACHOS

Use lean mince or chicken breast (no skin)
Pan fry the mince of chicken with 1 tsp oil, garlic and onions, add a can of tomatoes and can of beans. Chilli sauce if you want to spice it up! At this point you can add anything, mushrooms, corn, grated carrot or zucchini…

Use Mexicano corn chips (most supermarkets have these) as these have no salt, o preservatives, no numbers, the only ingredients are just NZ GM free corn and oil (not a lot).

Now the fun starts!

Place a few corn chips on your plate, just enough to cover base, top with meat and bean mixture.
Then top this with as many salad ingredients as you can. I like baby spinach leaves, grated carrots, chopped tomatoes, peppers, cucumber, red onion and a drizzle of your favourite vinaigrette.

Finally add some dollops of mashed avocado and lemon juice.

This takes about 20 mins to put together, get the salad stuff ready while the meats cooking.

You now have nachos with very little salt or fat and plenty of protein, fiber and lots of veges.
